This easy recipe combines seeds and cottage cheese for a high-protein, fiber-rich loaf that’s perfect for breakfast, snacks, or post-workout meals!
100 g flaxseeds
50 g sunflower seeds
50 g pumpkin seeds
30 g sesame seeds
30 g chia seeds
250 g cottage cheese (low-fat or regular)
3 egg whites
½ packet baking powder
1 pinch of salt
Preheat your oven to 180°C.
Blend the flaxseeds into a fine powder.
In a bowl, mix the flaxseed powder with the whole seeds.
Add the cottage cheese, egg whites, baking powder, and salt, and mix until you get a smooth batter.
Pour the mixture into a loaf pan lined with parchment paper.
Bake for about 45–50 minutes. Check doneness with a toothpick: if it comes out clean, the bread is ready!
Let cool before slicing and enjoying!
