Here's a quick and easy recipe for homemade wild garlic pesto!
100 g fresh wild garlic
50 g pinenuts
50 g grated Parmesan cheese
1.5 dl olive oil
1/2 tsp salt
Wash, remove the stems and dry the wild garlic.
Dry-roast the pine nuts in a frying pan.
Grate the Parmesan cheese.
Mix all the ingredients together and place in an airtight jar.
Conservation: add a drizzle of olive oil to the surface of the pesto for better conservation. Don't hesitate to add a little salt, again to preserve the pesto.
Enjoy it!
Note: Picking wild garlic is fun, but not without its dangers. This plant is very similar to the inedible lily of the valley and the highly poisonous colchicum. So be sure to inform yourself first if you decide to pick it yourself!
