Ingredients

3 liter water
4 organic tea bags (green, black, or herbal)
150 gr cup brown sugar
1 SCOBY (Symbiotic Culture of Bacteria and Yeast)
3 dl starter liquid (previously brewed kombucha)
1 glass jar or container
Breathable cloth or coffee filter
Rubber band

Preparations

Step 1

In a large pot, bring the filtered water to a boil. Remove from heat and add the tea bags, allowing them to steep for 10-15 minutes. Remove the tea bags and stir in the granulated sugar until it completely dissolves. Let the sweet tea cool to room temperature.

Step 2

Once the sweet tea has cooled, transfer it to a clean glass jar or container. Add the SCOBY (Symbiotic Culture of Bacteria and Yeast) along with the starter liquid (previously brewed kombucha). Gently stir to combine.

Step 3

Cover the jar or container with a breathable cloth or coffee filter, securing it with a rubber band. Place the kombucha mixture in a cool, dark spot away from direct sunlight. Allow it to ferment undisturbed for 7-10 days, depending on your taste preferences. The longer you let it ferment, the stronger the vinegar taste.

Step 4

After the fermentation period, carefully remove the cloth and taste a small amount of the kombucha. If it's too sweet, allow it to ferment for a few more days. If it's tangy and slightly fizzy, it's ready for bottling. Using clean glass bottles with airtight lids, pour the kombucha into the bottles, leaving some headspace.

Step 5

For added flavor and carbonation, you can embark on a second fermentation. Simply add your choice of fruits, herbs, or spices to each bottle. Seal the bottles tightly and let them sit at room temperature for 1-3 days, depending on your desired level of carbonation.

Step 6

Once the second fermentation is complete, refrigerate the kombucha bottles to slow down the fermentation process. This will also enhance the flavor and keep your kombucha fizzy. After a few hours of chilling, your homemade probiotic-rich drink aka kombucha is ready to be enjoyed!
