3 medium courgette
2 tbsp olive oil
2 garlic cloves, minced
200 g cherry tomatoes, halved
1 handful of fresh basil leaves
50 g grated Parmesan cheese(optional)
Salt and pepper to taste
Lemon juice (optional)
Thoroughly wash the courgette and cut off the ends.
Use a spiralizer to turn the courgette into long, thin strands resembling spaghetti. If you don’t have a spiralizer, you can use a vegetable peeler to create courgette ribbons.
Ina large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it’s slightly golden. Add the courgette spaghetti to the skillet. Sauté for 3 to 5 minutes until they are tender but still slightly crunchy.
Add the halved cherry tomatoes to the skillet and cook for another 2 to 3 minutes until they are slightly softened.
Season with salt, pepper, and a few drops of lemon juice if desired. Remove the skillet from the heat and add the fresh basil leaves.
