Have you ever eaten Green Waffles?If so, you probably know they're delicious. If not, now's the time to try them!

Ingredients

2 cups fresh spinach leaves
1 ripe banana

eggs
1/4 cup
unsweetened almond milk (or any non-dairy milk)
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 cup gluten-free oat flour
1 teaspoon baking powder
1/4 teaspoon
salt

Coconut oil or cooking spray, for greasing the waffle iron

Toppings of your choice: fresh fruit, nuts, seeds, yogurt, maple syrup, etc.

Preparations

Step 1

Begin by rinsing the fresh spinach leaves thoroughly under cold water. Pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

Step 2

In a blender, combine the spinach leaves, ripe banana, eggs, almond milk, maple syrup, and vanilla extract. Blend until smooth and creamy, forming a vibrant green batter.

Step 3

In a mixing bowl, whisk together the gluten-free oat flour, baking powder, and salt until well combined.

Step 4

Pour the green spinach batter from the blender into the dry ingredients in the mixing bowl. Gently fold everything together until just combined, being careful not to overmix.

Step 5

Preheat your waffle iron according to the manufacturer's instructions. Once heated, lightly grease the waffle iron with coconut oil or cooking spray. Pour the spinach waffle batter onto the preheated waffle iron, spreading it evenly to cover the surface. Close the waffle iron and cook until the waffles are golden brown and crisp.

Carefully remove the cooked waffles from the waffle iron and transfer them to a plate. Repeat the process with the remaining batter, greasing the waffle iron as needed between batches.

Step 6

Serve the waffles warm, topped with your favorite toppings such as fresh fruit, nuts, seeds, yogurt, or a drizzle of maple syrup and enjoy!
