This healthier ginger bread is made with wholesome ingredients, perfect for celebrating the festive season while staying mindful of nutrition.
300 g whole wheat flour
100 g coconut sugar (or maple syrup)
125 g honey (or maple syrup)
100 g melted coconut oil (or clarified butter)
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cloves
1 tsp baking soda
1 pinch salt
2 eggs
1 egg yolk (for glazing)
Sesame seeds or chopped nuts (for decoration, optional)
In a large bowl, mix together the whole wheat flour, coconut sugar, spices (cinnamon, ginger, cloves), baking soda, and salt.
Add the honey, melted coconut oil, and eggs. Mix until you have a smooth and slightly sticky dough.
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour (or overnight for more flavor).
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Roll out the dough on a lightly floured surface to about 0.5 cm thick. Use cookie cutters to cut out festive shapes, like Saint Nicholas figures or stars. Place the cookies on the baking sheet, spacing them slightly apart. Brush with egg yolk and sprinkle with sesame seeds or chopped nuts for added texture.
Bake the Biscombes for 10-15 minutes or until they are lightly golden.
Allow them to cool on a wire rack before serving and enjoy!
